Coconut lemon tart

Crust Ingredients

  • 100 grams toasted oats
  • 100 grams pecan nuts
  • 100 grams brazil nuts
  • 10 dates
  • 50 grams raisins
  • 4 tbsp. hot water

Filling Ingredients

  • 1 can of cream of coconut
  • 100 ml water
  • Juice and rind of 2 lemons
  • 50 grams raw unrefined sugar
  • 4 tbsp. corn flour
  • 1 tsp agar (optional, but will make the filling firmer like a panna cotta)
  • Desiccated coconut to serve

Method

  1. Place all the filling ingredients into a pan and heat on medium whisking all the time, until the filling forms a stiff paste.
  2. Place all the crust ingredients into a blender and pulse until combined, but not until it’s a paste.
  3. Press the crust into 6 small tart tins, press firmly to make a smooth thin layer.
  4. Fill the cases with the coconut mix and top with desiccated coconut
  5. Cool for 1-2 hours
